How Can I Make All Three Trays Show Up

In your print driver's properties or preferences window, go to the Accessories tab. If there is a button labeled Update, click on it to have the driver automatically update -- it should see all of your paper trays and other options, and automatically add them.
If there is no Update option, you should be able to manually select which options your printer has (such as additional paper trays) and add them yourself. If the settings are grayed out and you can't add any options, then whoever installed your print driver did not give you the correct permissions to modify the printer properties.
