How Do You Change The Date & Time That Are Printed?

This appears to be either a design defect or a sample defect; I can't find any documentation on how to correct this error. Your best option is to ask Epson--see the contact information here: https://www.contacthelp.com/epson/customer-service. If the error can't be remedied you may want to return the printer to the merchant or to Epson.
[Note that Epson's first-line phone support, while taking a huge amount of your time, is generally clueless; be prepared to (quickly) ask for a "level 2" technician, and to keep repeating that request if necessary.]
