Connect the PS3 AV cable via the PS3 input at the back as if you are connecting it to a TV via that same method, connect the red and white speaker Jacks to the back of your speaker inputs (match the colours) of your "DAV-FX500" as you will have done with any other devices, you may find that you now have a a loose yellow jack, this is usually for the Video display to a TV, you do not need to do anything with this as your video display is now coming from the HDMI.

Switch on your PS3, on the cross bar, go to ; "Settings, >>sound settings>>Audio output settings *Select Audio input connector* and confirm.

Switch on your DAV-FX500 and select the source sound as whichver of the Jacks your ps3 is now plugged into, typicaly "Aux", and you should be good to go.

The DAV-FX500 does have HDMI connectivity, so you could connect sound via HDMI by the same method above, but I wouldn't sacrifice a HD picture just for that.
