The first 6 pages of this document detail how to set up the scan to email feature:

Basically, you'll need to tell the copier where your SMTP server is and how to access it, and you'll also need to make sure the copier is able to access your SMTP server (if it needs a username and password, or if it needs to be trusted by the server).

Once you've set that up, you can input any email addresses that you're going to scan to into the address book so that you can just select them from the scan screen instead of having to type them in every time.
