Possible Thermostat Malfunction, Causing Problems For Growing Plants.

Hello. I work in a medicinal marijuana grow, and have 15 grow lights running. We were using a Rheem 3 1/2 ton heater/AC, and we switched to a XL Air 5 ton AC, because the Rheem couldn't keep up, especially in the hottest days of summer. However, the thermostat were using, the Honeywell th5220d1003, is still only reading a minimum temperature of 75°F this time of year, but we need the temp lower. I can tell the XL Air is putting out much cooler air, but the thermostat is still reading 75°F, and the overall room temperature still feels 75°. I don't know if the thermostat is the problem, or not, honestly, but we've checked and tried everything else. Have you any thoughts on this matter?
