Hi Temp Wah Option Definition

What is the difference between the sanitize and the hi temp wash options? My manual does not define hi temp wash although I have that option on my FGHD2433KBI dishwasher.

For this unit, the sanitize feature is said to kill 99.9% of bacteria using heated water that reached 152ºF. The high temp cycle only reaches 120ºF.
