Hi. Yes you can, only do note that the 1st gen Touch can only go as high as iOS 3.1.3. Also do note that the iOS 3.1 is a paid-for upgrade. To purchase it for your iPod, go to http://support.apple.com/kb/HT2052 for details. It doesn't cost much, just a few dollars or equivalent in your currency.

Remember that some Apps now require iOS version above iOS 3.1.3, so even if you do upgrade, there may be Apps that will not run on your iPod. But that still leaves a lot that will work on your iPod though.
