Sporadic Overheating

2003 excursion overheats periodically. Mechanic changed thermostat and flushed radiator. The heat will sometimes bury the gauge from normal to extra hot in minutes. Engine light comes on and check gauge light. Once it went up in less than a minute. I let it cool so I could relocate. It started and after a few minutes it started overheating again when all of a sudden it went down to normal and stayed there for remainder of trip. It seems like as though it would be the stat but we changed it. it will drive fine foe a while then it will overheat again. any ideasutjchi
