A/c Shut Off To Protect Engine

I have a 2007 Chevy Upnader. I get the A/C shut off to protect engine flash on my dashboard. I have noticed the high pitch sound of a an in the engine go on, then the temperature gauge goes toward hot, instead of in the middle where it normally is. The A/C message does not stay on. What can I do to fix it? I have taken it to two places and they have no idea what it is.
