All The Music I Download From Itunes Is Mpeg 4. How Do I Change This?

Everything I have downloaded has been put into a MPEG 4 format. I am trying to install them on my mp3 player and my cell phone and after I put it on there it will not play. I also can't listen to them with my Windows media player. It will only let me listen to them with iTunes. How can I convert them, or what can I change so that further downloads can be used.
