Freezer Does Not Keep Ice Cream Hard

the freezer does not turn on as it should so it allows ice cream to be soft. There is only one control and it is at 5 now the coldest. When we hit the controls it turns on but for very long. Could this be a thermostat

Yes the thermostat could be the issue but I suggest you go here for other causes of frig not being cold enough & the compressor running all the time.
