Most phones have little up&down buttons on the right or left edge of the phone!

With some phones, you are you use the Up and Down navigational arrows. Make an outgoing call and once the call is engage press either the Up or Down Nav batton until your desired volume lavel is reached (the same applies when playback music). A more narrowed answer to this questions can only be supplied after the knowledge of the Sansung phone's model number as these functions tend to differ from model to model.
