how exactly do you change this child knob?

Sometimes the choke knob is screwed on so if you have the original then that is a simple job. However to replace the knob assembly that will require a visit to a spares supplier to obtain a replacement and then disassembly to refit. You can obtain a dealer for parts lookup assistance, call 1-800-GO-STIHL (select option 2).
This is a link to a video showing how to dismantle. It is for the control lever. It goes further than you require but should enable you to solve your dilemma.
