How Do I Get My Samsung Blue Ray Home Theatre Set To Work At 5.1 Instead Of 2.1

i have a hdmi cable going from home theatre to tv and hdmi from virgin cable box to tv. i also have an optical cable between home theatre and cable box. i've played a dvd with 5.1 dolby but will only play at 2.1. cant find anything on menu screens to alter output. virgin tv is also only playing at 2.1.
