The ear gels simply pull off the Jabra Extreme2's speaker and you push the new one on.

First, take the eargel off. It is the soft rubber liner that is on the speaker already. You remove it by holding the protruded mold tip and pulling it back, across the gel cover. This is the only way I have found to remove it easily, because these gel covers hold tightly to the speaker. Then, put on the newly selected eargel in reverse fashion. Put on the edge near the protruded molding, then fit the rest of the circular edge around the speaker.
