I Admit I'm A Dinosaur, But How Do I Delete The Call History, Delete Contacts...
I can find the "add" buttons but where is the delete function?

In Android, you just long press on an item to bring up additional options (Think of it like as right click on computers), among those options you will find an option to delete.
For example, deleteing a call from the call history will just involve long pressing(keep pressing and a menu should pop up in two or three seconds), and selecting delete. Same procedure for contact, long press on the entry in the contact list, and voila :-)
