How Do I Change The Temperature In Convection Mode?

I know that the manual syas to use the "Start" button and "Self-clean" buttons to raise and lower the temperature, respectively. This doesn't work in convection mode. How do you change the temperature in convection mode without turning it off and turning it back on again? It takes 6 minutes for the fan to come on every time youdo this.
