What Speed On Kitchenaid Stand Mixer To Beat Egg And Brown Sugar

I would personally start out using speed 3 then when mostly mixed together bump speed up to about a 6-7 to effectively cream the egg and brown sugar together. see the posting below for additional information.

Speed Control Guide - 10 Speed Mixers

All speeds have the Soft StartT82; feature which automatically starts the Stand Mixer at a lower speed to help prevent ingredient splash-out and "flour puff" at start-up then quickly increases to the selected speed for optimal performance.

SPEED 1 - STIR - For slow stirring, combining, mashing, starting all mixing procedures. Use to add
flour and dry ingredients to batter, and add liquids to dry ingredients. Use Speed 1 to combine yeast dough.

SPEED 2 - SLOW MIXING - For slow mixing, mashing, faster stirring. Use to mix and knead yeast
doughs, heavy batters and candies, start mashing potatoes or other vegetables, cut shortening into
flour, mix thin or splashy batters. For heavy mixtures , please do not exceed Speed 2. For heavy loads, use a slow speed, no longer than 5 minutes.

SPEED 4 - MIXING, BEATING - For mixing semi-heavy batters, such as cookies. Use to combine
sugar and shortening and to add sugar to egg whites for meringues. Medium speed for cake mixes.
Use with: Food Grinder, Rotor Slicer/Shredder, Pasta Roller, and Fruit/Vegetable Strainer.

SPEED 6 - BEATING, CREAMING - For medium fast beating (creaming) or whipping. Use to finish mixing cake, doughnut, and other batters. High speed for cake mixes. Use with Citrus Juicer attachment.

SPEED 8 - FAST BEATING, WHIPPING - for whipping cream, egg whites, and boiled frostings.

SPEED 10 - FAST WHIPPING - For whipping small amounts of cream, egg whites or for final whipping of mashed potatoes.

NOTE:

  • Will not maintain fast speeds under heavy loads, such as when using the Pasta Maker.
  • Do not exceed Speed 2 when preparing yeast doughs as this may cause damage to the Stand Mixer and fuse gear.
