Why A Coupon Has To Be Used All At Once.

The short answer is: because Groupons says so. Groupon sets the terms of its offers, which you can accept or not. 

The motivation behind the rule probably has to do with the fact that a purpose of the merchant's participating is to introduce buyers to the facility, which is defeated if the buyer can spread the same bargain over many visits.
