Temperature Gauge Fluctuating Wildly.

In my 1994, GMC 5.0 L, 2WD, Suburban, just noticed the the temperature gauge rising to max almost immediately after starting to drive.  Stays like that for a minute or two, the then drops to half way.  After another few minutes, up it goes again to max.  Heater works sporadically, blowing hot, then cold.   Looking for specific troubleshooting tips.
