How Do You Make Olive Oil Mayonnaise?
Working on a school project on olive oil mayonnaise (reduced fat). Wondering you make the emulsion and how it is different from regular fat mayonnaise?

Making olive oil mayonnaise is no different than making regular homemade mayo. You still need the same ingredients:
- 1 egg yolk
- 1/2 teaspoon mustard powder (or add more to taste)
- 1 lemon, for lemon juice to taste
- 1 1/4 cup of olive oil
- 1/2 teaspoon sea salt
The first part is to blend in the yolk, salt, and mustard with one half of the olive oil solution. The other half of the olive solution can be incorporated to the mix, and blend again. Once all incorporates and it is to your liking, refrigerate and serve chilled.
