You have two options. The first, and easiest one, is to deactivate your account. Login, go to account settings, and click under "deactivate account". You will basically dissapear from the system, nobody will find you or your info, but in reality everything will remain in the facebook computers in case you want to re-join at some point.

To completely erase yourself from their system, you need to request to be deleted. Go to this link: https://ssl.facebook.com/help/contact.php?show_form=delete_account&__a=5
