Coolant

fill fluid reservoir and it still says "low coolant" and will overheat

Does the coolant level in the overflow tank go down after you shut off the car? That should be when the radiator draws the coolant back into it. If the overflow tank coolant level doesn't go down, something is wrong with the system.

The first thing to do is to check the coolant level in the radiator. Make sure the radiator is cold and then remove the cap. It should be full to the top or close to it. If it isn't full, top it off. 

Never rely on the overflow tank to keep your radiator full, especially if it overheats even once. There can be a lot of reasons why the overflow tank is not bringing coolant back into the radiator. The radiator cap could be plugged up with sediment or defective, which will prevent the coolant from going back into the radiator. Or the hose from the overflow tank to the radiator could be plugged up. The overflow tank will also plug up with sediment, making it almost impossible for the coolant to flow back into the radiator. 

The best thing to do is remove the overflow tank, empty it out and clean out any sediment. Then put new coolant in it and toss (recycle) the old coolant. Make sure the hose is free of sediment as well. I would also buy a new radiator cap to play it safe. You cannot let your car overheat more than once or twice. You will do serious damage to the engine if it keeps over heating.
